- 2 cups cherry tomatoes halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper freshly ground
- 1 teaspoon dried oregano
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
In a mixing bowl, combine the halved cherry tomatoes, olive oil, salt, pepper, and dried oregano. Toss until the tomatoes are well coated.
Spread the tomatoes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20 minutes, or until the tomatoes are soft and slightly caramelized.
Remove from the oven and let cool slightly before serving.
