Ingredients 

Main Ingredients

  • 1 whole Chicken about 4-5 pounds
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1 whole Lemon halved
  • 4 cloves Garlic peeled
  • 1 bunch Fresh Herbs such as rosemary, thyme, and parsley

Instructions 

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out and pat it dry with paper towels.
  3. Rub the chicken with olive oil, then season it inside and out with salt, pepper, garlic powder, and paprika.
  4. Stuff the cavity with lemon halves, garlic cloves, and fresh herbs.
  5. Place the chicken breast-side up in a roasting pan.
  6. Roast the chicken in the preheated oven for about 90 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 10-15 minutes before carving.
