- 4 medium zucchini sliced into rounds

Preheat your oven to 425°F (220°C).
In a large bowl, toss the zucchini rounds with olive oil, salt, pepper, and garlic powder.
Spread the zucchini in a single layer on a baking sheet.
Roast in the preheated oven for 20 minutes, or until tender and slightly browned.
