Ingredients 

Main Ingredients

  • 1 cup crab meat picked over for shells
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 cup fish stock
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  • 2 tablespoons dry sherry

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the flour and whisk to form a roux. Cook for 2-3 minutes.
  3. 3. Gradually whisk in the milk and fish stock, stirring constantly until the mixture thickens.
  4. 4. Stir in the heavy cream, salt, and white pepper. Bring to a simmer.
  5. 5. Add the crab meat and cook for another 5 minutes.
  6. 6. Stir in the sherry and cook for an additional 2 minutes.
  7. 7. Serve hot, garnished with a sprinkle of fresh parsley if desired.
