Ingredients 

Main Ingredients

  • 2 cups cooked rice preferably day-old
  • 1 lb shrimp peeled and deveined
  • 2 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 cup frozen peas and carrots
  • 2 eggs beaten
  • 2 stalks green onions sliced
  • to taste salt and pepper

Instructions 

  1. Heat the wok over medium-high heat and add sesame oil.
  2. Add garlic and stir-fry for about 30 seconds.
  3. Add shrimp and cook until pink, then remove from wok and set aside.
  4. Add peas and carrots, cook for 2-3 minutes.
  5. Push veggies to the side, pour in beaten eggs, and scramble until fully cooked.
  6. Add cooked rice, soy sauce, and shrimp back into the wok. Stir-fry everything together.
  7. Season with salt and pepper, garnish with green onions, and serve hot.
