Ingredients 

Main Ingredients

  • 3 pounds Chuck Roast
  • 1 cup Beef Broth
  • 4 cloves Garlic minced
  • 1 large Onion sliced
  • 4 large Carrots cut into chunks
  • 4 large Potatoes cut into chunks
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2 sprigs Thyme
  • 2 sprigs Rosemary

Instructions 

  1. 1. Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned.
  2. 2. Place the seared roast in the slow cooker. Add the beef broth, garlic, onion, carrots, potatoes, thyme, and rosemary.
  3. 3. Season with salt and pepper. Cover and cook on low for 8 hours, or until the meat is tender and easily shredded.
  4. 4. Remove the roast and vegetables from the slow cooker. Let the roast rest for a few minutes before slicing.
  5. 5. Serve the pot roast with the cooked vegetables and some of the cooking liquid as gravy.
