- 4 large flour tortillas
- 6 eggs beaten
- 1 cup shredded cheese
- 1 cup cooked and crumbled sausage
- 1 bell pepper diced
- 1 small onion diced
- 1 tablespoon butter
- 1 cup salsa
1. Heat the butter in a skillet over medium heat.
2. Add the diced onion and bell pepper, cook until softened.
3. Pour in the beaten eggs and scramble until fully cooked.
4. Stir in the cooked sausage and shredded cheese.
5. Warm the tortillas in a separate skillet or microwave.
6. Divide the egg mixture among the tortillas, top with salsa, and roll up into burritos.
