Ingredients 

Main Ingredients

  • 2 cups Cooked chicken, shredded
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels
  • 1 cup Shredded cheese
  • 1 cup Chopped spinach
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 8 pieces Egg roll wrappers
  • 1 cup Oil for frying

Instructions 

  1. In a large mixing bowl, combine chicken, black beans, corn, cheese, spinach, cumin, chili powder, salt, and pepper.
  2. Place an egg roll wrapper on a clean surface. Add about 2 tablespoons of the mixture to the center of the wrapper.
  3. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll up tightly. Seal the edges with a bit of water.
  4. Heat oil in a frying pan over medium heat. Fry the egg rolls for about 2-3 minutes on each side, or until golden brown and crispy.
  5. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.
