Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 Carrot, chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 4 cups Vegetable Broth
  • 2 cans Black Beans, rinsed and drained
  • 1 can Diced Tomatoes
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Red Pepper Flakes
  • 1 Lime, juiced
  • ¼ cup Cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, red bell pepper, and carrot. Cook for another 5 minutes.
  4. Stir in ground cumin and chili powder, cooking for 1 minute.
  5. Add vegetable broth, black beans, diced tomatoes, salt, black pepper, and red pepper flakes. Bring to a boil.
  6. Reduce heat and simmer for 20 minutes.
  7. Stir in lime juice and chopped cilantro before serving.
