Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic, cook until softened.
Add chopped red bell pepper, paprika, and cayenne pepper. Stir well.
Pour in fish stock and diced tomatoes. Bring to a boil.
Add fish chunks, reduce heat, and simmer for 15-20 minutes.
Season with salt and black pepper to taste.
Garnish with fresh parsley before serving.
