Spinach Rolls with Puff Pastry

- 1 package Puff pastry thawed
- 2 cups Fresh spinach chopped
- 1 cup Ricotta cheese
- 1 cup Grated Parmesan cheese
- 1 piece Egg beaten
- 1 teaspoon Salt
- 1 teaspoon Black pepper
Preheat the oven to 400°F (200°C).
In a mixing bowl, combine chopped spinach, ricotta cheese, Parmesan cheese, salt, and pepper.
Roll out the puff pastry on a lightly floured surface.
Spread the spinach mixture evenly over the puff pastry.
Roll the pastry into a log and cut into 1-inch slices.
Place the slices on a baking sheet lined with parchment paper.
Brush the tops with beaten egg.
Bake for 15-20 minutes or until golden brown.
Serve warm.
