Ingredients 

Main Ingredients

  • 2 cups Coconut milk
  • 2 cups Chicken broth
  • 1 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Red curry paste
  • 1 cup Mushrooms, sliced
  • 1 cup Chicken breast, cooked and shredded
  • 1 tablespoon Fresh ginger, grated
  • 2 cloves Garlic, minced
  • 1 tablespoon Brown sugar
  • 1 cup Cherry tomatoes, halved
  • 1 handful Fresh cilantro, chopped

Instructions 

  1. 1. In a large pot, combine coconut milk, chicken broth, fish sauce, lime juice, and red curry paste. Bring to a simmer over medium heat.
  2. 2. Add mushrooms, chicken, ginger, garlic, and brown sugar. Simmer for 10 minutes.
  3. 3. Add cherry tomatoes and cook for another 5 minutes.
  4. 4. Serve hot, garnished with fresh cilantro.
