Tomato Vegetable Soup

Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 carrots, sliced
- 2 celery stalks, sliced
- 4 cups vegetable broth
- 2 cans diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 cups spinach, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and minced garlic. Sauté until the onion is translucent.
Add the sliced carrots and celery. Cook for about 5 minutes.
Pour in the vegetable broth and diced tomatoes. Stir in the dried basil, dried oregano, salt, and black pepper.
Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
Add the chopped spinach and cook for another 5 minutes.
Serve hot and enjoy!
