Vegan African Peanut Stew

- 1 tablespoon Olive Oil
- 1 Onion, chopped
- 2 cloves Garlic, minced
- 1 Ginger, minced 1-inch piece
- 1 cup Peanut Butter natural, unsweetened
- 4 cups Vegetable Broth
- 2 cups Sweet Potatoes, diced
- 1 can Diced Tomatoes 14.5 oz can
- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Coriander
- 1 teaspoon Salt
- ¼ teaspoon Cayenne Pepper
- 1 bunch Kale, chopped stems removed
- ¼ cup Cilantro, chopped
Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Sauté until softened.
Stir in peanut butter, vegetable broth, sweet potatoes, diced tomatoes, cumin, coriander, salt, and cayenne pepper. Bring to a boil.
Reduce heat and simmer for 20-25 minutes, until sweet potatoes are tender.
Add chopped kale and cook for another 5 minutes.
Garnish with chopped cilantro before serving.
