Instructions
1. Heat a large pot over medium heat. Add a splash of oil, then add the chopped onion and garlic. Cook until softened.
2. Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
3. Remove from heat and let cool slightly. Transfer to a blender and blend until smooth.
4. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Heat through before serving.
