Ingredients 

Main Ingredients

  • 1 head Broccoli chopped
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Coconut Milk
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a splash of oil, then add the chopped onion and garlic. Cook until softened.
  2. 2. Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer until broccoli is tender, about 10 minutes.
  3. 3. Remove from heat and let cool slightly. Transfer to a blender and blend until smooth.
  4. 4. Return the soup to the pot, stir in the coconut milk, and season with salt and pepper to taste. Heat through before serving.
