Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil for sautéing
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 2 Carrots sliced
  • 2 Celery Stalks sliced
  • 1 Zucchini chopped
  • 1 can Diced Tomatoes 14.5 oz
  • 4 cups Vegetable Broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • 1 cup Green Beans chopped
  • 1 cup Corn

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Add carrots and celery, cook for 5 minutes.
  4. Add zucchini, diced tomatoes, and vegetable broth. Bring to a boil.
  5. Reduce heat, add salt, pepper, thyme, and basil. Simmer for 20 minutes.
  6. Add green beans and corn, cook for another 5 minutes.
