Vegetable Thukpa

Main Ingredients
- 200 g Noodles any type
- 1 cup Cabbage shredded
- 1 cup Carrots julienned
- 1 cup Bell Peppers sliced
- 1 cup Spinach chopped
- 4 cups Vegetable Broth
- 1 tablespoon Soy Sauce
- 1 teaspoon Ginger minced
- 2 cloves Garlic minced
- 1 tablespoon Oil for cooking
- to taste Salt
- to taste Pepper
Heat oil in a large pot over medium heat.
Add minced garlic and ginger, sauté until fragrant.
Add carrots, bell peppers, and cabbage. Cook for 5-7 minutes.
Pour in vegetable broth and bring to a boil.
Add noodles and cook according to package instructions.
Stir in soy sauce, spinach, salt, and pepper. Cook for another 2-3 minutes.
Serve hot.
