Ingredients 

Main Ingredients

  • 200 g vermicelli noodles
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup bean sprouts
  • ¼ cup chopped fresh herbs (mint, cilantro, basil)
  • ¼ cup crushed peanuts

Dressing

  • ¼ cup fish sauce
  • ¼ cup lime juice
  • 2 tablespoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon chili paste

Instructions 

  1. 1. Cook vermicelli noodles according to package instructions. Drain and rinse under cold water.
  2. 2. In a mixing bowl, combine fish sauce, lime juice, sugar, minced garlic, and chili paste. Stir until sugar is dissolved.
  3. 3. In a large bowl, combine cooked noodles, shredded carrots, sliced cucumber, bean sprouts, and fresh herbs.
  4. 4. Pour the dressing over the noodle mixture and toss to combine.
  5. 5. Serve in bowls, topped with crushed peanuts.
