Ingredients 

Main Ingredients

  • 4 cups leeks, white and light green parts only, sliced
  • 1 cup onion, chopped
  • 2 cups potatoes, peeled and diced
  • 4 cups chicken stock
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the leeks, onions, and potatoes in the chicken stock until tender, about 20 minutes.
  2. 2. Puree the soup in a blender until smooth.
  3. 3. Stir in the heavy cream and season with salt and pepper to taste.
  4. 4. Chill the soup in the refrigerator for at least 2 hours before serving.
