  • 2 pounds baby potatoes halved
  • ¼ cup Dijon mustard
  • ¼ cup olive oil
  • 2 tablespoon red wine vinegar
  • 1 teaspoon honey
  • 1 clove garlic minced
  • ¼ cup chopped fresh parsley
  • to taste salt and pepper

Instructions 

  1. 1. Boil the potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and set aside.
  2. 2. In a mixing bowl, whisk together the Dijon mustard, olive oil, red wine vinegar, honey, and minced garlic.
  3. 3. Add the warm potatoes to the bowl and toss to coat with the dressing.
  4. 4. Stir in the chopped parsley and season with salt and pepper to taste. Serve warm.
