Winter Root Vegetable Soup Recipe
A hearty and warming winter soup made with a variety of root vegetables.

Main Ingredients
- 2 cups carrots, chopped
- 2 cups parsnips, chopped
- 2 cups potatoes, chopped
- 1 cup celery, chopped
- 1 cup onions, chopped
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
1. Heat the large pot over medium heat and add a bit of oil.
2. Add the onions and garlic, sauté until softened.
3. Add the carrots, parsnips, potatoes, and celery. Cook for about 10 minutes, stirring occasionally.
4. Pour in the vegetable broth, add salt, pepper, and thyme. Bring to a boil.
5. Reduce heat and let it simmer for about 30 minutes, until vegetables are tender.
6. Use a blender or immersion blender to puree the soup until smooth.
7. Serve hot and enjoy!
