- 1 lb carrots peeled and cut into sticks
- 2 tablespoon olive oil
- 2 tablespoon honey
- Salt and pepper to taste
- 1 teaspoon fresh thyme leaves optional
Preheat oven to 400°F (200°C).
In a bowl, toss carrots with olive oil, honey, salt, and pepper.
Spread carrots on a baking sheet in a single layer.
Roast in preheated oven for 25-30 minutes, until tender and caramelized.
Sprinkle with fresh thyme leaves before serving, if using.
