Main Ingredients
- 1 large butternut squash peeled, seeded, and cubed
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- to taste salt and pepper
- 2 tablespoon olive oil
1. Heat olive oil in a large pot over medium heat.
2. Add onion and garlic, cook until softened.
3. Add butternut squash, vegetable broth, cumin, coriander, cinnamon, and nutmeg. Bring to a boil.
4. Reduce heat and simmer until squash is tender, about 30 minutes.
5. Use a blender to puree the soup until smooth.
6. Season with salt and pepper to taste. Serve warm.
