Ingredients 

Main Ingredients

  • 1 large butternut squash peeled, seeded, and cubed
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • to taste salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onion and garlic, cook until softened.
  3. 3. Add butternut squash, vegetable broth, cumin, coriander, cinnamon, and nutmeg. Bring to a boil.
  4. 4. Reduce heat and simmer until squash is tender, about 30 minutes.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and pepper to taste. Serve warm.
